Ingredients
Base
6 medium apples (not cooking apples, as they aren’t sweet enough)
1 tbsp honey
½ lemon juiced
2 tsp cinnamon
½ tsp nutmeg
Pinch salt
1 ½ tbsp plain flour (or gluten free)
½ cup water
Crumble
2 cups rolled oats
1 cup almond meal
3 tbsp honey
2 tsp cinnamon
½ cup butter
Coconut sugar (to sprinkle on top – optional)
Method
Preheat oven to 180C and get a medium baking dish.
Cut the apples in half and thinly slice them (peeling optional), chuck out the cores, and put in baking dish.
Add the honey, lemon juice, cinnamon, and nutmeg to the dish. Mix the flour, salt and water in a cup then pour over apples. Mix everything together well.
In a bowl mix together the rolled oats, almond meal, honey, cinnamon, and butter. Sprinkle the crumble over the apple mixture in the dish.
Cover the dish with tin foil and cook for 50 minutes or until apples are soft. Take off the tin foil and cook for a further 5 minutes, until golden on top.
Serve on its own or with low sugar ice cream or coconut yogurt.
