Ingredients
170g self-raising flour (gluten free if needed)
40g cocoa powder
1 tsp baking powder (gluten free if needed)
120g coconut sugar
170g coconut oil or olive oil
3 large eggs
1 tsp vanilla extract
50g dark chocolate melted (optional)
Icing
250g Cream cheese
2 tbsp Icing sugar
1 tsp vanilla extract
Method
Set oven to 180 C fan forced and line a 20cm circle baking tin.
Mix all dry ingredients together in a large bowl and mix the wet ingredients in a smaller bowl separately.
Add wet ingredients to dry and mix well.
Tip the mixture into lined baking tin and put in the oven for 20-25 minutes or until knife comes out the middle clean. Allow the cake to cool.
To make icing, mix all icing ingredients together and spread over the cake once it has cooled.
