Ingredients
4 eggs
6 slices lean ham
10 cherry tomatoes
1 cup spinach
3 mushrooms
½ onion
25g grated cheese
2 tbsp olive oil
Salt & pepper
1 tbsp chives
Method
Cut the ham into small squares, the cherry tomatoes into quarters, the mushrooms into small cubes and dice the onion.
Place a large fry pan on high heat with 1 tbsp olive oil add your chopped veg, spinach and ham.
Stir periodically for 12 minutes or until golden. Take off heat and set aside in a bowl.
Whisk the eggs, wipe the pan with a paper towel, and put the pan on a low to medium heat with a tbsp of olive oil. Pour in the egg and cook for 3 minutes with lid on, then add the veg and ham to one half of the omelette and sprinkle on the cheese.
Fold the omelette over the veg and cook for a further 3 minutes with lid on pan.
Slide onto a plate, cut in half for 2 people and season with salt, pepper and finely chopped chives.
