Ingredients
200g blended walnuts
50g coconut flour
3 tbsp cocoa powder
50g oats
3 tbsp coconut oil
200g pitted dates
2 tbsp almond milk
50g dark choc chips
Method
Preheat oven to 180C and line tray with baking paper.
Add dates to a jug and cover with boiling water, leave for 10 minutes to soak.
Blend walnuts to a powder.
Add powdered walnuts to a large mixing bowl and add all other dry ingredients (do not add coconut oil, dates, or chocolate squares)
Drain water from dates and put dates in blender with coconut oil (melt coconut oil for 30 seconds in microwave beforehand if it’s hard), and almond milk. Blend to create a date paste.
Add the date paste to the dry ingredients and mix together.
Mix choc chips through mixture.
Use a spoon and your hands to shape the mixture into cookies and place on the lined baking tray.
Put tray of cookies in oven and cook for 10-12 minutes (take out before cookies start to darken, this would mean they are over cooking).
Once out of oven, leave to cool for 30 minutes before storing in an airtight container for 1 week in fridge.
Note: I like to freeze half of them so they are fresh for the week after and I tend to have one cookie a day.
