Sticky Date Pudding

Serves: 16 Prep: 15 mins Cook: 25 mins


Ingredients

  • 2 cups pitted dates

  • ½ cup butter

  • 2 eggs

  • 1 ¼ cup whole meal flour

  • 1 tsp baking soda

  • 1 ½ tsp baking powder

  • Maple syrup

  • Vanilla ice cream


Method

  1. Preheat oven to 180C or 160C Fan forced and line a square baking tin with baking paper.

  2. Soak dates in the boiling water for 10 minutes, meanwhile mix the butter and eggs in a mixing bowl.

  3. After the dates have soaked, drain them and add them to a blender together with 1 cup of water and blend until smooth. Mix the date mixture with the butter and eggs.

  4. In a separate bowl mix the flour, baking soda and baking powder, then add to the bowl of wet ingredients, mix well.

  5. Pour the batter into the lined baking tin and cook in the oven for 25 minutes or until a skewer inserted into the middle comes out clean.

  6. Once cooked take out the oven and while still hot, use the skewer to evenly poke lots of little holes into the cake. Drizzle over the maple syrup and serve hot with vanilla ice cream.
